Camp Breakfasts with your Skillet

Waking into the smell of campfire smoke & bacon frying in a skillet is  biggest  joys of camping.  With smoke,  sizzle, aroma, combined with being outdoors,  is there a better way to wake up?  To a big camp breakfast. And one to remember is this story

Before you can even get out of your sleeping bag, or get that first cup of coffee, your  saying, “Feed Me!”. (can’t get that great smokey aroma from a propane  campfire can you)

So give this camp breakfast recipe I have found a wile back,  & have been enjoying  a try.  Its one I am sure you will like too.

Breakfast Scramble

Best when prepared in a cast iron skillet

Serves 4 – 6 (easily doubled for more campers)

Ingredients:

  • ½ lb. bacon ( 6 – 8 strips)
  • 1 lb. sausage – patties are best
  • 2 cups hash browns – fresh or frozen
  • 1 ½ cup Sharp Cheddar cheese – shredded is best, crumbled will work
  • 6 large eggs
  • 1 large onion – Spanish yellow is best, but Sweet works too
  • Optional – 1 small green pepper – diced
  • ½ stick butter (4 tbsp)
  • Salt & Pepper (to taste)

Pre-preparation:

  • If not already, form sausage into patties
  • Dice onion into ½ inch cubes/pieces
  • Mix eggs, salt & pepper (to taste) into a scramble mix

Preparation:

  1. cook sausage and bacon until crisp and well done, set aside
  2. drain away meat’s cooking grease, except for just enough to cover bottom of skillet
  3. cook hash browns until almost crispy, stirring frequently
  4. stir in onion chunks, (and green pepper if used) and crumbled or quartered sausage patties
  5. cook until onions are soft – about 5 minutes
  6. stir in eggs, cook & stir entire mixture until eggs are done (looks like scrambled eggs)
  7. stir in 1 cup cheese, and butter (sliced into chunks)
  8. crumble bacon strips, then sprinkle bacon crumbles and remaining cheese over top of skillet contents – do not stir or mix!
  9. cover and simmer just until sprinkled cheese is melted

You’re done! Best served from the skillet on the table-top where your camper’s can see the end result before diving in, but if not eating around a common table, just spoon onto plates. (the campfire song about your amazing talent will come later … after dinner)

One KOA campground is the heart of tourist country, within walking distance of 40 restaurants and the Atlantic coast. Many KOA Campgrounds around the country place themselves in an environment like this for the convenient resources to the campers. Some have trout ponds that are kept stocked in the spring , summer and fall with delicious trout that you can pay a small fee and catch , cook , and enjoy. All through out the great smoky mountains you will find some really great campgrounds that you & your family are sure to enjoy. You may want to consider getting the children a tent of their own.

Dutch Oven Recipes – Mountain Man Breakfast

There is several versions of this camp breakfast ,  I like this one that has been posted on netwoods.com

Mountain Man Breakfast

Ingredients for ~6 people: 1/2 lb bacon (or pre-cooked sausage) 1 med onion 2 lb bag of hash brown potatoes 1/2 pound of grated cheddar 1 doz eggs 1 small jar of salsa (optional) The following requires 6-9 bottom coals and 12 -15 top coals: Pre-heat 12 inch Dutch Oven. Slice bacon & onion into small pieces and brown in the bottom of the DO until onions are clear. Stir in the hash brown potatoes and cover; remove cover & stir occasionally to brown and heat potatoes (15-20 minutes) Scramble  eggs in a seperate container &  pour the mixture over the hash browns. Cover & cook until eggs start to set.(10 – 15 minutes) Sprinkle grated cheese over egg mixture, cover & continue heating until eggs are completely set and cheese is melted. Optional: cover cheese/egg mixture with a small jar (~ 1 cup) of SALSA. Cover and cook for an additional 3-5 minutes. Slice and server like quiche.

(Real men don’t eat quiche but I sure get lots of requests to cook up the Mountain Man.)

Be sure to cook up a good mountain man breakfast for your crew.

Cooking times will vary with the weather and your state of awake but its almost impossible to mess up.
